Cucumber, chilli, yoghurt and poppy seed salad

I didn’t have any fresh chilli when I made this, so I used dried chilli and peas out of my garden instead. It still tasted great. We added tomatoes and fresh basil leaves as well


Cucumber is very refreshing and cooling on a hot day and poppy seeds add crunch and a lots of healthy minerals to this salad

1/2 a Lebanese cucumber cut into bite sized pieces
1 mild chilli thinly sliced
1/4 to 1/2 red onion chopped finely
1/4 cup celery chopped finely
1/4 cup low fat Greek yoghurt
11/2 tbsp white wine vinegar
1/4 tsp ground coriander
3 tsp poppy seeds
1/2 tsp low GI raw sugar
black pepper to taste

Place cucumber, celery and onion in a bowl and toss together with the chilli
In a small bowl whisk together yoghurt, vinegar, coriander, poppy seeds, sugar and a pinch of salt
Just before serving pour yoghurt dressing over cucumber and toss to coat
Season to taste with black pepper and more vinegar if desired
